J's Spicy Red Beans and Rice

This is a quick and easy recipe for two.

1 can kidney beans
1 bowl Minute Rice "Ready to Serve!" Yellow Rice
1 Tbsp Heinz Chili Sauce
Several generous shakes of Mrs. Dash Table Blend
Couple dashes of sriracha (optional, if you like it really spicy)

Microwave Minute Rice according to package directions. Set aside. Open beans and drain half of liquid. Combine kidney beans, chili sauce, and Mrs. Dash in a large bowl. Microwave on high for 1 minute or until hot. Add rice and sriracha, if using. Mix well.

Makes 2 servings.

Steamed Vegetables & Rice Medley

Another quick and easy recipe.

1 bag Dole Broccoli Florets
1 bag Bird's Eye Steamfresh Sweet Peas
1 bag mukimame (shelled soybeans)
1 bag Bird's Eye Steamfresh Brown & Wild Rice with Peas, Carrots & Corn
1/4 chopped red onion
1/2 cup diced raw carrots
1/4-1/2 cup Thai peanut sauce *
Salt & Pepper to taste

Steam all bagged vegetables and rice according to individual package directions. Allow to cool slightly. Chop onion and carrots and place in large bowl. Add steamed vegetables and rice. Add Thai peanut sauce. Mix well. Add salt and pepper to taste.

Enjoy warm or cold from the fridge. Can be eaten as a complete meal or served as the filling in lettuce wraps.

Makes 4-5 servings.

* Read the ingredient label carefully. Some peanut sauces contain honey. I used San-J brand, which does contain honey, therefore, this meal was not 100% vegan by the strictest standards. However, I believe honey falls into a bit of a gray area of veganism. Not all vegans agree. If you personally are opposed to using honey, feel free to use your favorite non-honey peanut sauce.
